Where to have it: Donglaishun, a well known restaurant with a long history of serving hot pot since 1903. As shown, the charcoals are in the middle of the pot, which makes it so unique. There are many Donglaishun Chain restaurants around Beijing and the most easily accessible one is shown below.

Xiabu Xiabu (呷哺呷哺,Shabu-Shabu), a cheap hot pot restaurant , is now super popolar among young local in Beijing. The difference is that you have your own pot fixed on a electricity stove instead of the traditional one that cooks with charcoals and shares the same soup with others.
