As shown in the audio, listening to an middle age man yelling "吃爆肚“ ( eat boiled trip, the second picture on the right) is a ritual if you are in Wangfujing. 

I know what catches your eyes! Scorpion! Right?  

As a Chinese who spent 4.5 years in Beijing,  and I believe all the local Beijinger agree with me that No CHINESE OR BEIJINGERS  REALLY EAT THOSE STUFF.

Come on, it is just a tourist trap.  Take a listen to what natalie said about her watching her U.S. friends eating scorpion. 

Donghuamen Night Market(东华门夜市), close to Wangfujing snack street, is another popular touristic street. The Amazing Race season 14 even featured it. Take a quick look. 



According to Fangfei, another Beijinger, it has been too commercialized that the local stops visiting. 



 

Starfish and those stuff as Chinese delicacies? Again, we generally don't  eat those stuffs, and as far as I know, only the adventurer want to try them to show off coolness.

If you want to try really local small eats, Donghuamen night market  is not your place.
